Week in Photos May 20 ~ 25

This week was filled with a LOT of activity.  I do have to say, on the few days of my life that are not hectic, it takes some work to come up with a good photo!  I’m guessing it will be the photos that make me think outside of the box that will help me grow the most!  So bare with me…Mondays photos were a little boring!

However, the week started off on Sunday with lots of activity.  It was Mother’s Day, a week late, at the Kokal’s and Anna’s (my sister-in-laws) Birthday Celebration.  Whenever that side of the family gets together it’s always chaotic.  The Hoffman’s have 3 beautiful children that always keep us entertained and keep my camera busy!  It’s Beautiful chaos…as you will see.


SUNDAY: You will notice, when big events happen, it’s not just one photo, it’s a collage of photos, I just can’t pick one!

Notice:  I am obsessed with peoples eyes and teeth!  My nephew has the most BEAUTIFUL blue eyes!  No photoshoping done here!  Those are the real deal!  I have to say the bottom B&W picture sums up the life of the Hoffman’s in a heart beat!  I’m glad I got that photo because in a few years that will be Ash, Brendan, and my husband and the Hoffmans’ can finally sit back and enjoy the moment, while our lives become the chaotic ones!  
I just love the story that this film describes!  Grandpa Dan definitely knows how to make the kids smile and laugh!  That was my Sunday!
MONDAY: I got home late from work and the sun was setting.  I was really bummed because the CUTEST little Yorkie named Bailey came by the office to say Hi and gave me LOTS of kisses (and I forgot my camera ;( )!  It was official, I realized the only children I want at the moment are more puppies!  Don’t worry husband…I promise I won’t surprise you with another one…for a while. :)  So this night I had to be creative and decided to take a photo of a few of my favorite Bathroom items!  (I told you people! I was stretching for this one…but it’s still a look into my life.  Take it or leave it.

1st PHOTO: Mandarin Coriander Thymes Hand Soap: I’m in love with soaps and Thymes has the BEST scents!  The Coriander is a great summer bathroom soap!  I also have the Olive soap and matching Olive lotion for the Kitchen!  The best part is they have refills and they are not ridiculously overpriced!

2nd PHOTO: Guest Napkins~FYI when you go to someones house and they have “guest napkins” to wipe your hands dry after washing them, USE THEM!  That is what they are there for!  They may look fancy, but your host wants you to use them!  They are adorable and when they are gone, guess what?!  We get to buy more!!!  They are nice because then your guest don’t have to use your dirty hand towels you use to wipe your face or your childs face off with!  So guests: USE THEM!  PLEASE!  I’m begging you!

3rd PHOTO:  New Philips Sonicare Electric Toothbrush ~  Family, Friends, I’ve worked in the dental field for almost 8 years now….Sonicare is by far THE BEST electric toothbrush out there!  If you are in the market for a new toothbrush, this is the Bentley of Toothbrushes!  If you can’t afford to go to the dentist every 6 months, then at least invest in one of these.  Your teeth and your pocket book will thank you later!  I promise!

 TUESDAY: Photo Editing Day~  Can this be my permanent job? Pretty please?!!!  I woke up and edited pictures from the weekend, came home, poured myself a glass of wine and worked on my blog while listening to my favorite music!  I’m sure some day I won’t enjoy editing photos and blogging as much as I do now…but right now… at this very moment, I’m in absolute HEAVEN!  Can I please do this as a full-time job for the rest of my life?  It makes me so happy!  Every Tuesday and Thursday night, my husband is at class.  He is getting his masters in psychology…he is so smart!  So I am left at home with my two best friends…Nelson and Collins (or depending on the day, wine and my computer)  This night is was wine and my computer!  <3


Salsa de Naidyhorski is amazing!  It’s HOT, it’s FRESH, it’s ADDICTING!!!  The Dentist I work for, Dr. Melissa Naidyhorski, brought this salsa into work a few months ago.  The very first bite I ever took I thought, “this is way to hot for me”.  I could hardly taste it, it was that hot!  (read ingredients below to see why) But I couldn’t help going back for more and more and MORE!  I’m not sure what I liked more, the garlic or the challenge of how hot it was!  Minnesotans are known for their weak, weak ability to add heat to just about any entree and I don’t want to be one of “those” Minnesotans, especially since I have family in the south!  I need to be able to keep up with them!  Since my first experience with the salsa, I’ve had it 3 other times and this night I decided to make it myself and share it with all of you!  I learned a few things while making it:  1.) Don’t try and put all the ingredients in the food processor at once…it just won’t work  2.) Make sure your garlic heads are large (they are the best part)  3.) Don’t over process.

My first batch turned out good, but it wasn’t so hot that it made my eyes water, like it usually does, which means I may have to add more kick next time!  But trust me, if  you are up for the challenge, you HAVE to try it!  And if you do, please comment below and let me know what you thought!

Salsa De Naidyhorski (I made that name up, real creative, I know)

20 Roma Tomatoes (cut in half and insides scooped out)

2 Onions (white)

1/2 Bunch of Cilantro

3 Serrano Peppers (including seeds)

4 Habanerro Peppers (including seeds)

3 Jalepeno Peppers (including seeds)

3 Limes (just the juice) ~even though the picture only shows 2

2 Tablespoons of Sea Salt (or to taste)

Shhh…the secret ingredient  2 HEADS of Garlic (that’s right..HEADS, not 2 little dinky cloves…the entire thing (peeled of course!))


In the food processor: chop tomatoes in 3 separate batches, place chopped tomatoes in a large bowl and drain the excess liquid off

Next in the food processor: add garlic and peppers together and chop, then add onions, cilantro and 3 squeezed limes and chop

Last, add remainder of chopped ingredients to tomatoes and a dash or two of sea salt to taste and Wa LA! ENJOY!

Best Served Chilled and within the 1st 3 Days!


My mama came over and tried my salsa, she was crying over how hot it was even though I wasn’t.  I made a few rookie mistakes with my first batch, but the recipe that is posted is accurate!  I do have to say, I love my mama.  She is a great woman inside and out and she never gives herself enough credit.

After she left, it was bath time for Mr. Nels!  He was S-T-I-N-K-Y-!!!!  What he really needs is a hair cut…he can’t really see, but I keep forgetting to call the goomers and I’m super busy this weekend, so hopefully next weekend we can get him an appointment.  I can never tell if Mr. Nels likes his baths.  He doesn’t seem to complain to much, but always tries to escape at least once!  Here are some snippets of our bath time adventure!  He’s so cute!  Even when he looks like a drowned rat!


Okay, so I know I said I was going to post my week-in-photos on Sunday, but come-on!  Who was I kidding?!  It’s Memorial Day weekend and I don’t want to have to worry about blogging!  Plus, I’ve got a very busy weekend planned and I’m sure there will be lots of photos to go along with it, so I’d rather keep them separate from this Week in Photos.  So, here’s to the end of a long week and beginning of a long weekend!  I leave you with a couple images I’m sure will look very familiar in your world this weekend!  Happy Memorial Day Weekend Everyone!  Be safe…and Summer….WELCOME BACK!
